Baked Salmon, Asian Greens, Miso Sauce
Serves 4ppl
Prep = 10mins Cook = 15mins Marinate = 1+ hours
Ingredients
4 x skin off salmon fillets (approx. 2-250g)
2 bunches Asian greens – such as pak choy choy sum or Chinese broccoli
rice
oil
salt
Marinade/Sauce
4 tbsp white miso
1 tsp ginger
4 tbsp rice vinegar
4 tbsp mirin
4 tbsp honey
Method
1. Mix all marinade ingredients together
2. Marinate the salmon in 1/2 of the mixture
3. Bake salmon @ 200c in an ovenproof dish for 13-15mins
4. Cook rice as per instructions on packet
5. Boil Asian greens for 2-3 minutes in salted water, drain and toss in some of the remaining dressing
6. Serve dish with a spoon of rice, Asian greens and miso salmon on top – drizzle a little dressing over to finish!
